Gooey Sun Cup Bars

A few months ago I was walking down the candy aisle mourning the old candies I used to be able to eat.


As I got to the end of the aisle I noticed some bright packages I hadn’t seen before.

Are. You. Kidding. Me?

Sun Cups.

I picked up the package and sure enough – it was what I had hoped. Nut-free chocolate covered sunbutter cups.

I grabbed my phone and started freaking out on Snapchat.

I picked up a few packages and headed home to share the good news with my 4-year-old allergic boy.

On the drive home I dug in.

By the time I got home, I’d already eaten mine, the package for my husband and one from the 2-pack for my son.

Needless to say, I was catching up for lost time.

When J.C. bit into his, his eyes lit up! I immediately felt terrible for eating his second cup.

I made it up to him today with these yummy treasures – Gooey Sun Cup Bars (peanut, treenut & egg-free!)!

It’s pretty easy! You basically start with cookie dough. I exchanged eggs for applesauce. A lot of people with egg allergies can eat baked eggs, but that’s only if they’re baked really well. Blondie bars are too gooey for me to ever feel comfortable enough to use eggs for someone allergic.

Next, throw it in a pan. Sprinkle your chopped Sun Cups on top.

Throw some more dough on top. Then sprinkle with more Sun Cups. And bake away!

Just make sure to let the bars cool. That way they won’t be quite as gooey. If you want them to be a little less gooey – go for 1/2 c. applesauce instead of 2/3!

1 c. Butter
1 1/2 c. Brown Sugar
1/2 c. White Sugar
2/3 Unsweetened Applesauce (Or 2 eggs!)
1/4 tsp. Vanilla
Dash of Salt
2 c. Flour
12 oz. Chocolate Chips
12 Sun Cups


1. Pre-heat oven to 350 degrees
2. Mix melted butter and sugars
3. Add applesauce and vanilla
4. Mix flour and salt in a small bowl
5. Combine sugar mixture and flour mixture
6. Add chocolate chips
7. Pour half of the batter into greased pan
8. Sprinkle 10 chopped Sun Cups over batter
9. Spread remaining batter over the Sun Cups
10. Sprinkle remaining 2 chopped Sun Cups on top
11. Cook for about 30 – 35 minutes, let stand for at least 10 minutes (maybe more!)
